    Chicken Bacon Wraps

    2 Chicken Breasts
    Instant Rice
    Bacon
    Spinach Tortillas
    Caesar Dressing

    Directions
    Cut cooked chicken into bite size pieces. Bake bacon for 15-18 minutes at 375 degrees. Chop into small pieces. Prepare about 2 cups instant rice. In spinach wrap, place desired amount of Cesar dressing, rice, chicken and bacon. Wrap tightly. Enjoy!

  • Jace Lane competes in four events

    Jace Lane competes in four events

    Jace Lane entered the International Finals Youth Rodeo in four events. This busy cowboy from Morse, Texas competes in steer wrestling, team roping, calf roping and saddle bronc riding.  “I like riding broncs best, I’ve worked the hardest at it and it’s what my dad did.” He started riding broncs in the summer of his eighth grade year. He practiced at Panhandle State, under the instruction of Robert Etbauer. Jace graduated Salutatorian with a class of 32 from Gruver High School. He takes his education seriously, graduating with 27 hours of college credits under his belt. He has the gift of remembering anything he reads, and he puts studying first, planning on becoming a vet. He balances rodeo and school by managing his time wisely. “My routine after school was to come home, get one subject of homework knocked out, practice until dark, and study.” The combination has paid off. He won All Around for the last three years in his region, and won it at state. He is currently holding the All Around spot at the IFYR for 2014. “Nationals (National High School Finals Rodeo) didn’t pan out for the last two years; I had mental breakdowns and got bucked off. Usually if I start thinking too much I come off to the left, I get out of my saddle, and look off. Where you look is where you go,” he said. His dad (Justin) works for a rancher. “He has a bunch of land,” said Jace. “We run 8,000 wheat pasture calves so I get lots of roping practice. Depending on the horse, I get lots of bronc practice too.” His mom, Shannon, is a teacher. He has an older brother, Tyler, who is a petroleum engineer, and a younger sister, Jaylee. Both rodeoed through school. Jace will start in the fall at Tarleton. “I got the best rodeo offer from there, along with schooling.” He will rodeo for the team there, but plans to put rodeo aside when he enters vet school. “I would keep rodeoing if I didn’t have all the education plans I have. I’ve always wanted to be a vet. I definitely want to go to the college finals rodeo all three years.” He does not plan to give up rodeo forever. “I’ll be around it once I become a vet and that’s what I want my kids to do, so it will always be a part of me. Rodeo opened up doors for education that I would not have had otherwise.” Top 15 in the average with one round to go! BarrelRacing

    It Runs in the Family

    Laramie Girty has been competing at the International Finals Youth Rodeo for three years. This year is a special year as she gets to be part of the Hall of Fame induction ceremony of her brother, Justin McDaniel. “I’m proud of him. He gives me good advice and I pester him and tell him I’m going to be better than him at bareback riding if mom and dad would give me a chance. My mare always bucks with me, so I always tell him that I can outride him.”

    The 17-year-old from Porum, Okla., competes in barrels and poles and favors the barrel racing because she and her horse, Nugget, are better at it. “I’ve had him since I was six, we are the same age together,” she said. Laramie started competing when she was three. “Justin would lead line me when I was little in the barrels,” she recalls. Her brother, Tanner, competed as well and she grew up watching Justin compete. She was four when she started competing on her own. Along with rodeo, Laramie plays basketball, where she is a starter, and track. She will graduate next year with a class of 30. She likes to hang out with friends and swim at the nearby lakes and cliffs.

    Her goals for the future include going to college at Connors first for her basics and then OSU to become a vet. “I want to be a general vet.” She also wants to fill out her permit for the WPRA and make the Finals. “I’m training this mare that I have right now and she’s bred to run. Impressive and Dash for Cash.”  Training her mare is something that has come natural to her. “I trained my horse now and some other horses. I have a gift for it – it happens. I like doing it, so it doesn’t bother me to go out there and work. I call Justin’s girlfriend, Blazi, who runs barrels, and she helps me.” She’s sitting in the middle of the pack for this year’s IFYR and is looking forward to the hitting the road for the rest of the summer. She competes in barrel races and open rodeos around Oklahoma and Texas.

    Laramie is the daughter of Janie, who works at the Post Office and Tony, who does construction work. They were all present for the induction ceremony held on July 9. Justin was unable to be in Shawnee for the induction as he was competing in Calgary, currently sitting sixth after 8 perfs. Justin competed in the IFYR in 2003 and 2004, winning back to back bareback championships and the All Around title in 2004. “It’s been 10 years,” he said from Calgary. “The IFYR is great stepping stone. That was the biggest thing at the time and means as much as any championship.” He qualified for the IFR when he was 16, in bulls. He went back the next year, 2004, and rode all four bulls won the average. That was the same two years he won the bareback title in IFYR. The 4x NFR qualifier and 2008 Bareback Champion still shares the arena record with Will Lowe that record was set in 2007 riding Delta Ship in round 3of the NFR. His recent win in Reno brought this cowboy over the $1 Million mark.

    His sign is proudly displayed in the town: Home of 2008 World Champion Bareback Rider. “My sign is going to be above his soon,” said Laramie.

    Strawberry Rhubarb Pie

    This is an annual favorite that I have made for years. Pick rhubarb that is easy to pull from the base. The redder the better as far as the stalks go. It takes four cups for two pies.

    4 cups rhubarb, sliced one inch
    4 cups sliced strawberries
    1 ½ cups sugar
    ½ cup brown sugar
    ½ cup flour
    1 tsp. nutmeg
    ¼ cup fresh squeezed orange juice
    4 tbls butter

    Directions:
    Combine all ingredients above and let stand while you make the crust and bake it.

    Line bottom crust on two pie pans and brush with egg white. Bake for 10 minutes at 400.

    Divide filling between two pies and dot butter on top

    Put top crust on and pinch edges

    Brush with egg white, sprinkle with sugar, and pierce several times with knife.

    Bake 45 minutes at 375

    Make sure you put a piece of foil underneath to catch the runoff!

    Enjoy warm with ice cream or half and half

    Don’t step on the scale for at least a week

    1.Whether you’re in Rock Springs for the National High School Finals or Vernal for the Dinosaur Round-Up PRCA Rodeo, some of America’s most amazing fishing is just an hour from your front door. Flaming Gorge is a fish filled impoundment of the Green River that harbours massive 50 plus pound Lake Trout along with Kokanee Salmon, Rainbow and Brown Trout and aggressive small mouth bass. I recommend using Captain Monty for an unforgettable day of fishing aboard his ultra comfy jet boat, the “Trout Teaser”. He’s a local guide with over 20 years of experience fishing here and has everything you need to pluck the fish of a lifetime from the Gorge. You’ll find the most success here by targeting specific fish using a fish finder but you can also just relax and tell rodeo stories while trolling around with down riggers.

    For awesome fly fishing, hit the Green River below the dam near Dutch John, Utah. It’s a blue ribbon trout stream that offers outstanding angling opportunities with up to 20,000 cutties, bows and browns per mile. If you’re a spin caster these fish might be a little smart for your liking but they aren’t impossible to catch with the right lures. Last year, a local told me to try an orange and gold spoon and it was an absolute trout slayer.
    If fishing isn’t for you, Flaming Gorge’s 91 miles of water still offers plenty of summer fun for the whole family. You can rent watercrafts ranging from jet skis all the way up to houseboats from Lucerne Valley Marina to cruise around in search of the perfect cliff jumping spot.

    2. Every morning I stumble around searching for a coffee to help bring me to life and in Rock Springs there’s no better place than Cowboy Donuts for that stout cup of brew. Starting at 5 am, Monday to Saturday, owners Jay and Derek serve up their delicious coffee and donuts to lineups of groggy locals. But it’s their kick-ass kolaches that they’re becoming famous for and if you don’t know what that is, you’ve been missing out. A kolache is the perfect breakfast on the go; a freshly baked, slightly sweet pastry filled with cheese, ham or sausage and jalapeños if you’re looking for a little extra eye opener.     3. For a quick sightseeing trip close to Rock Springs, check out the Pilot Butte Wild Horse Scenic Loop. This well maintained, 23 mile stretch of gravel road only takes about an hour and a half to drive and offers amazing views of not only wild horses but also several other types of animals and the beautiful landscape that they call home. The Rock Springs district holds over 2,500 horses that are truly wild, untamed creatures; descendants of horses set free by Spanish explorers in the 1500’s and ranch horses coaxed into their herd through the years. Unlike most rodeo cowboys, these mustangs and their friends are most active first thing in the morning. So grab a cup of joe and a kolache and hit the trail early!

    lamb4. Coyote Creek Steakhouse and Saloon is the go to spot for your family’s post rodeo celebrations. As any great steakhouse must, they have a variety of mouth watering beef and chicken dishes prepared in ways that will impress even the toughest palate. It’s their Rack of Lamb au Poivre that’s a real stand out on an already stellar menu. They coat tender lamb in crushed black peppercorns, glaze it with brandy, and then simmer it in rosemary, Dijon, beef broth, heavy cream, and butter. (404 N.     Strawberry Coconut Pound Cake

    Cake:
    1 box pound cake (ingredients on box)1 cup strawberries, sliced
    1 tablespoon balsamic vinegar
    1 tablespoon sugar
    Frosting:
    1 jar whipped frosting
    1 cup whipped topping
    2 teaspoons coconut extract
    1/4 cup flaked coconut
    1 cup fresh blueberries

    Directions:
    Combine strawberries, balsamic vinegar, and sugar in saucepan and cook until consistency of jam. Let cool. Mix pound cake according to box. Pour into cake pan. Spoon all of strawberry mixture and use skewer to swirl on top. Bake according to pound cake mix. Combine whipped frosting, whipped topping, coconut extract, and flaked coconut. Spread frosting on top of cooled cake. Sprinkle blueberries on top of frosted cake and ENJOY!

    5 lbs. of Red Potatoes
    1 large onion – chopped
    1 ½ cups of mayonnaise
    3 tablespoons of yellow mustard
    1 tablespoon of salt

    Directions
    Season with dried parsley – a few fresh green onion tops – for color if desired

    Scrub potatoes – cut bite size chunks – boil until tender – drain completely – cool in refrigerator

    Mix mayonnaise, mustard, salt and parsley

    Blend into potatoes with onions

    Taste – then adjust to your liking

    Taylor and Rickie Engesser learned how to ride without a saddle – bareback. “They ran barrels with bucking riggings,” said their dad, Shorty. They started riding when they were two and competed at the Belle Jackpot, the starting place for other rodeo greats like Nikki and Kristi Steffes. Taylor finished her first year in college as the 2014 CNFR Barrel Racing Champion as well as Rookie of the Year. Rickie won the South Dakota State High School Barrel Racing Championship and is headed to Rock Springs, Wyo., to try for the National High School Barrel Racing Championship.

    Both girls run barrels on the same horse, a 19-year-old gelding named Rowdy. “I just bought him because I liked him,” said Shorty, who bought the gelding when he was four from a friend in Gillette. “We tried to sell him two or three times – he was strong and couldn’t keep the barrels clean.” It took several years for the horse to start clicking with the girls. The family credits younger brother, Jace, with helping to make Rowdy a champion. “When Jace started running flags on Rowdy, it seemed to free him up to run barrels.”

    Shorty is always looking for horses. The family currently has around 20 horses on the place in various stages of training. “I either fix them and sell them, or we keep them. Rowdy is the real deal.” With Dee Bar, Leo Bars, and Cool Deep bloodlines, Cool Rowdy has taken all three Engesser kids to the pay window on many occasions. “He set an arena record in Shawnee, he’s made it to the high school finals three years and won the short go there last year. He also took Jace to the World Champion in Flags in the National Little Britches Finals Rodeo last year.”

    Clayton Biglow is one of two 2013 IFYR Champions trying to make a repeat performance at the 2014 IFYR. So far, it’s looking pretty good for the 18-year-old from Clements, California. He is leading the bareback riding after the first round and is the high score for the second round. He started riding bareback horses as a sophomore in high school, but has been involved in rodeo his whole life. “Rodeo found me. My dad (Russ) rode bucking horses and my mom (Jessie) was in the show world, jumping horses.” His sister, Taylor, runs barrel and breakaway ropes and his youngest sister, Maddie, runs barrel, poles, and jumps. “Jumping helps with balance,” Clayton explains. “Mom trains jumping horses. She’s got 15 to ride every day and I help ride them.”

    Clayton won the 2013 and 2014 Bareback Champion for California High School Rodeo and split the win at the 2013 National High School Finals Rodeo. He will head to Rock Springs to compete in the bareback riding and team roping. He won the bareback riding last year in Shawnee and took home a saddle, lots of Cinch jeans, a buckle, and $2,500. “It’s the richest high school rodeo I’ve ever been to.” Now sitting fourth in the Columbian River Circuit, he admits that he hasn’t won that much in one rodeo since.

    Clayton is heading to Feather River College in California, and plans to apply to CalPoly. He wants to go for a degree in Ag Business and will use his degree to help him with a cattle business when he retires from rodeo. His rodeo plans include riding on his permit and then making a run for Rookie of the Year.

    He hits at least 50 rodeos a year between high school and pro. “It’s a full time job.” His favorite part is the people he meets. “You will never have friends like you have in rodeo. You are never against each other. It’s not the highest paying job, but you will have more fun.”

    fb1_Taylor_SMS_8212Taylor Howell, from Adon, Calif., outside Los Angeles, heard about the IFYR through an old world champion, Bill Cameron. The bareback rider did his research and decided to head east and give it a try. He got on his first bareback horse a little over a year ago at a high school rodeo. “I drew a big old stout horse and was upside down after four seconds. She launched me 13 feet up and every which way but good. From then on it’s been a work in progress,” he said. “I take something positive from every horse.”

    Taylor relies on his fellow rough stock riders to set his rigging and help him get down the road. He lost his vision to a rare retinal cancer at the age of two and has been legally blind ever since. “It’s all done by feel and hearing,” he said of his routine behind the chutes and life in general. “I memorize where everything is in my bag.” Once his rigging is set, he can take it from there. “I can feel the horse and he knows I’m there. Everything else is about getting comfortable.” Taylor believes that the inability to see is an advantage once the gate is open. “Once that horse leaves, you’ve got to be lifting on the rigging to feel the horse,” he explained. “You get on some dirty horses, and you can get faked out if you can see.” The most dangerous part of the ride is the dismount. “I think the toughest thing, and that goes for everybody, whether you can see or not, is getting off. Everything is happening at once. The pick up men are good about talking to me the whole time about when to get off. But I’ve been hung up, kicked in the head, and thrown in the fence.” He is helped out of the arena by his fellow contestants and always ready to ride again. 

    Taylor was raised around trail horses, and grew up riding colts. “You ride with your legs,” he said. He had been around rodeo through his uncles and cousins and has done some roping, relying on a bell to hear where the calf is. Taylor knew he wanted to get on bucking horses, and picked bareback over saddle bronc based on the cost to start. “A rigging cost less, and once I got on my first one, I was told I was a natural at it and it’s starting to work out good.” He took second at a recent rodeo, riding for a score of 71.

    He made contact with another bareback rider through Facebook who was blind in one eye. Brad Gower became his mentor and brought him to Oklahoma where he became friends with Willie Clyde McKinney and Ben Meek, two IFYR contestants. The three have become instant friends. “We met him and he changed us,” said Clyde. “I thought you had to see to ride, now I know it’s all about feel.”

    The three are heading to Connors State College in Warner, Okla. in the fall to rodeo and further their education. Jacob Lawson, rodeo coach for Connors State College, has welcomed Taylor to the team. “He seems like a really nice young man. We’ve had a couple kids go through our horse program that are visually impaired and he will start this fall.”

    Rodeo has brought Taylor from California to Oklahoma. He has not let his lack of vision stop him from achieving his dreams. “I’m looking forward to this summer with these two”  

    “He’s going to change the way people look at a rodeo career,” concluded Clyde. “Everybody can do something in the sport of rodeo.”

    Taylor agrees. “Looking back now, I wouldn’t change anything.”

    International Finals Youth Rodeo Names Newest Hall of Fame Member

    (SHAWNEE, Okla.) – The International Finals Youth Rodeo will induct Justin McDaniel of Porum, Okla., into its 2014 Hall of Fame in a ceremony on July 9 at 5:30 p.m. at the Heart of Oklahoma Exposition Center in Shawnee.   “I would like to thank the IFYR for the induction into the Hall of Fame. Some of my greatest memories and accomplishments come from the IFYR. It was my goal to win multiple titles while I was competing at the IFYR, and I was very blessed to have won three championships, said McDaniel. “The IFYR was the biggest playing field for me at the time, competing against the greatest high school contestants from around the world,” he added.   “I’m very sorry to announce that I will not be able to make it to the induction. I’m still competing full time and currently ranked in the top 10 in the PRCA World Standings and chasing another world title,” McDaniel said. “The Calgary Stampede gave me the call at the last minute and invited me up for a chance to compete for $100,000. It is an offer I can’t refuse. I would like to thank everyone again for the induction it is truly an honor.” McDaniel is 27 years old and was the IFYR bareback champion in 2003 and 2004 and won the all-around competition in 2004. After high school McDaniel became a professional rider and joined the Professional Rodeo Cowboys Association, winning the bareback riding world title in 2008. McDaniel is a five time National Finals Rodeo qualifier. He has also won the National Finals Rodeo average title twice. McDaniel currently rodeos full-time while raising cattle on his ranch in Porum, Okla.   “We would like to welcome Justin McDaniel into the Hall of Fame and recognize his accomplishments as a past contestant of the IFYR,” said Mike Jackson, operations manager of the Heart of Oklahoma Exposition Center. “He excelled in several years of competition at the IFYR and continues to do so in his professional rodeo career, while contributing to the sport of rodeo.”   Mike Outhier became the first IFYR Hall of Fame inductee in 2007. Previous inductees include Jet and Cord McCoy and the late Mark McGee in 2009, Jackie Dube Jatslau in 2011 and Ken Etchieson and Suzanne Gilbert in 2012.   To qualify and become a Hall of Fame member, inductees must have competed in the IFYR at least 10 years prior and still be participating in the rodeo world. A selection committee reviews nominee records and in-turn makes a recommendation to the Civic and Cultural Development Authority that governs the IFYR.
